1 1/2 pounds Italian turkey sausage \t15 ounce pizza sauce \t1-15-ounce can tomatoes \t1 medium white onion, diced \t2 cups mushrooms, quartered \t6 cups zucchini spirals (fresh or frozen) \t1/2 cup sliced black olives \t1 tablespoon olive oil \t1 tablespoon oregano \t1/2 tablespoon basil \t1/2 teaspoon salt \t1/2 teaspoon pepper Directions: \tIn a large skillet, sauté the zucchini in olive oil on medium heat and cook through, about 4-5 minutes. When done, pour the zucchini spirals into a colander to drain and set aside. \tAdd diced onions and mushroom quarters to the same pan, adding a bit more olive oil if necessary, and cook for 2-3 minutes until tender. \tIn the same pan, add the sausage and cook for 5-7 minutes until it is browned. \tAdd the tomatoes, pizza sauce, and spices, stirring together and cooking for an additional 5 minutes. \tMix zucchini spirals in with the sausage and sauce, stirring together for about a minute. \tServe topped with olive slices, and fresh oregano or basil. Serves 4.
