- 1/4 cup old fashioned oats
- 1 tablespoon cocoa powder
- 1/4 cup protein powder
- 1 tablespoons applesauce
- 1 tablespoon peanut butter
- 1 pinch salt

In a small bowl or mug, microwave peanut butter for 10-20 seconds, or until it is softened slightly, and easy to mix. Scoop a small amount of melted peanut butter and set aside for step #4 if desired.

Add the rest of the ingredients and stir to combine.

Form mixture into a cookie shape on a plate and enjoy immediately, (cookie may be soft if you don’t refrigerate first, but it is still delicious), or cover and place in the fridge/freezer for 5 minutes or more.

Drizzle with melted peanut butter if desired and enjoy!
