Grilled Chicken and Veggie Foil Packets



  • 1 lb boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 small onion (sliced)
  • 2 tbsp extra-virgin olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 2 tablespoons olive oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper (to taste)
  • Red pepper flakes (optional, for serving)
  • Fresh parsley (for garnish)


  1. Preheat: Heat your grill or fire pit.
  2. Prepare Foil: Lay out four large sheets of foil (about one square foot each).
  3. Mix Ingredients: In a bowl, oil, combine chicken, bell peppers, zucchini, onion, olive oil, paprika, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  4. Assemble Packets:
    • Divide chicken mixture evenly onto each foil sheet.
    • Fold up edges and seal packets tightly.
  5. Grill or Fire Pit:
    • Place packets on grill or fire pit.
    • Cook for 20–25 minutes, turning once.
  6. Serve: Open carefully, sprinkle with red pepper flakes (if desired), and garnish with fresh parsley.
