Directions:
- Preheat the oven or air fryer to 375 degrees.
- Cook the ground meat in a large skillet over medium-high heat until it is no longer pink, breaking it apart as it cooks. Add the taco seasoning and stir to combine.
- Add the cream cheese and salsa, stirring until cream cheese is melted. Stir in the Greek yogurt and shredded cheese and remove from the stove.
- Heat the tortillas in the microwave for 10-20 seconds to soften.
- Place two heaping tablespoons of filling on each tortilla, and then wrap it into a tight roll. Place the rolled tortilla seam-side down on a baking sheet lined with parchment paper (or into the air fryer basket). Repeat until all the filling and tortillas have been used.
- Serve with your favorite taco toppings and a healthy fat.
OVEN: Spray tortillas with cooking spray. Bake until the tortillas are crispy, about 5-10 minutes.
AIR FRYER: Place however many taquitos you can fit in the air fryer basket while leaving a little bit of space in between each. Spray tortillas with cooking spray. Cook for 5-10 minutes, until tortillas are crispy. Repeat, cooking in batches (if needed).
