Ingredients: \t12 hard-boiled egg cut in half and remove and keep 6 yolks* \t2 avocados \t2 cups riced cauliflower \t1/2 cup diced onions, carrots, or celery (you chose) \t1/2 cup mayo, greek yogurt or cottage cheese \t 1 teaspoon paprika \t2 tablespoons fresh cilantro \tSalt and pepper to taste Directions: \tBoil eggs and cut in half. Remove the yolks and keep 6 yolks. Set the other 6 yolks aside to use as a healthy fat for a different meal, or discard them. \tSteam riced cauliflower. Pop a small hole in the bag and microwave for 2-3 minutes. Drain out any moisture by pressing cauliflower between two dry paper towels. Set aside. \tCut up avocado and mash. Add the 6 yolks. \tAdd optional veggies and mayo, cottage cheese or yogurt. Mix until well blended and scoop into hollowed-out eggs. \tYou will be able to fill them generously. Add paprika, salt, and pepper and top with optional cilantro and enjoy. Makes 24 pieces. 4 per serving.
