- 1 lbs cooked chicken breast
- 1 (16 oz) jar salsa
- 6 tortillas medium to large (100-150 calorie avg)
- 1 (15 oz) can refried beans
- 1/2 cups shredded cheese
- Add 100 calories of healthy fat – either olives or avocado would be amazing!
Directions:

Preheat the oven to 425 degrees. Line a baking sheet pan with foil and spray with cooking spray. In a large bowl, mix together the chicken, salsa, and beans. Lay out the tortillas on a working surface and divide the chicken mixture evenly among them. Next, divide 1/3 cup of cheese among each of the tortillas. Tuck the ends of the burritos in and roll them tightly.

Lay them on the baking pan and spray them with cooking spray. Bake for 15-20 minutes, or until they are golden brown and crisp. Take them out of the oven and enjoy immediately, or if you plan to enjoy them later, let them cool on a paper towel completely. Wrap each burrito individually in foil and store in fridge for up to 5 days, or in the freezer for up to 3 months. To serve, dip in salsa or guacamole if desired.
