Ingredients

  • 16 ounces shredded chicken
  • 2 tablespoons almond butter
  • 2 tablespoons olive oil
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt
  • 1 cup celery, chopped
  • 1/2 cup red onion, diced
  • 1/2 cup grapes, halved
  • 1/4 cup mandarin oranges
  • 1/4 cup sliced almonds, chopped
 

Directions:

  1. Make dressing by whisking together almond butter, olive oil, apple cider vinegar, mustard and salt in a small bowl.
  2. Combine shredded chicken, celery, red onion, grapes, raisins and almonds in a large bowl and toss to mix. Add dressing and continue.
