Zesty Turkey & Black Bean Lettuce Wraps

Ingredients

 

  • 1 1/2 pounds ground turkey
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 12 large lettuce leaves (such as romaine or butter lettuce)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic, cooking until softened.
  2. Add ground turkey, cumin, and chili powder, cooking until turkey is browned and fully cooked.
  3. Stir in black beans, lime juice, cilantro, salt, and pepper. Cook for an additional 2-3 minutes.
  4. Spoon turkey mixture into lettuce leaves.
  5. Top with cherry tomatoes and avocado.
  6. Serve immediately, folding the lettuce leaves like a wrap.
