Tuna Salad with Avocado and Sunflower Seeds

Ingredients

  • 1 can of tuna in water, drained
  • 1/2 avocado, diced
  • 2 tbsp sunflower seeds
  • 1/4 red onion, finely chopped
  • 1 cup cucumbers, halved
  • 2 cups baby spinach
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Directions: 

  1. In a large bowl, combine the drained tuna, diced avocado, sunflower seeds, chopped red onion, and cucumber.
  2. Add the baby spinach to the bowl.
  3. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper to make the dressing.
  4. Drizzle the dressing over the salad, toss to combine, and serve.
