1 cup whole-grain mustard \t1 tablespoon olive oil \t1 cup unsweetened applesauce \t 2 tablespoons apple cider vinegar \t 2 teaspoons honey \t1 cup chopped parsley \t16 ounces boneless, skinless chicken breast \t1 teaspoon salt \t1 teaspoon black pepper Directions: \tIn a large bowl or resealable plastic bag, combine the mustard, olive oil, applesauce, vinegar, honey and parsley. Add chicken and marinate for 20 mins. \tRemove the chicken from the marinade. Season with salt and pepper. \tGrill the chicken breasts until cooked through 4–6 mins per side. \tIf you don’t have a grill, you can bake the chicken breasts. Preheat the oven to 400°F. Bake the chicken for 30–40 mins, until the chicken is completely cooked through and opaque. \tServe with grilled veggies and a healthy fat. \tAdd optional carb. Serves 4.
