Ingredients

Bowls:

  • 2 tablespoons olive oil
  • liced bell peppers
  • liced onion

 For Serving:

  • reek yogurt

Directions:

  1. Heat a large skillet over medium heat. Add in the ground beef and sauté until cooked through and no longer pink. Drain any excess liquid in the pan. Add in the tomato paste and sauté for another minute. Mix in the taco seasoning and water and reduce heat to low (if using the homemade seasoning, start with 2 tbs water and add more if needed). Let simmer for a few minutes to let the flavors blend and until mixture thickens. Scoop meat into a dish and set aside.
  2. Clean out the pan and add the avocado oil. Turn heat to high. Add in the sliced bell peppers, onions, and 1/2 cup water and bring to a simmer. Cover pan and turn heat to medium low. Sauté the peppers and onions, stirring occasionally. Once peppers and onions look like they are beginning to soften, remove the lid for the last few minutes to allow the water to completely cook off.
  3. Assemble your bowls with a base of rice (or cauliflower rice). Add a layer of beef, sautéed pepper/onion, corn, tomato, and beans. Top with Greek yogurt
  4. Add avocado for healthy fat. Squeeze fresh lime juice over bowls if desired. Enjoy!
