Ingredients

  • umpkin
  • ggs
  • lmond milk (any milk)
  • rotein powder
  • alt
  • aking powder
  • innamon

Directions:

  1. Preheat oven to 350 and grease mini muffin pan. Combine all ingredients in a large mixing bowl. Mix with a whisk until batter is smooth.
  2. Fill mini muffin molds 3/4 full. Bake for 20-25 minutes, or until toothpick inserted comes out clean. Let cool completely to room temperature, then use a knife to gently remove them from the muffin tin. Serve with whipped topping if desired.

Makes 12 muffins
