Grilled Steak Salad with Avocado and Walnut Dressing

Ingredients

  • 24 oz (1.5 lbs) grilled flank steak, sliced (150g protein)
  • 18 cups mixed greens (e.g., romaine, arugula)
  • 3 avocados, sliced
  • 1 1/2 cups red onion, sliced
  • 1 1/2 cups walnuts, chopped
  • 1/4 cup olive oil
  • 2/3 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup crumbled feta (optional)

Instructions:

  1. Grill the flank steak to your desired level of doneness, then slice it thinly against the grain.
  2. In a large salad bowl, combine the mixed greens, red onion, and avocado.
  3. In a blender, combine the walnuts, olive oil, balsamic vinegar, Dijon mustard, salt, and pepper. Blend until smooth to create the walnut dressing.
  4. Top the salad with the sliced steak and drizzle with the walnut dressing. Toss gently and serve.  Add cheese if using.
