Directions:
- Place all of the ingredients in a blender and blend until smooth.
- Heat a griddle or non-stick pan over medium low heat (check to see if it is hot enough with a splash of water; if it sizzles, it is hot enough).
- Spray the pan with cooking spray. Pour about 1/4 cup pancake batter onto hot griddle for each pancake. When pancakes bubbles, flip and cook the other side until golden brown on both sides. Repeat to make 12 pancakes.
- Top with topping of choice and serve!
