1 Whole Wheat Flour or Gluten Free Tortilla \t1/2 cups of chopped romaine lettuce \t3 oz of cubed leftover chicken \t1/4 cup of grape tomatoes, sliced in half \t2-3 individual garlic croutons (optional) \t1 tablespoon of shredded parmesan cheese \t1/4 cup of Greek Yogurt, more or less if preferred \tdash of salt, pepper, garlic powder Directions: \tWash and chop your romaine lettuce, cube your chicken if needed, and slice your tomatoes in half. \tIn a large bowl, combine all of the salad ingredients, apart from the tortillas. Toss with the dressing, and then determine if you would like more. \tFill your tortilla with a scoop full of salad, leaving a border around the edges. To fold it, fold the sides in and then wrap the top and bottom across the middle, holding the sides in. The whole wheat tortilla tends to tear easily so do not overfill it. \tServe with a healthy fat and enjoy!
