- 3 cups frozen broccoli
- 1/4 cup cottage cheese
- 1/8 cup parmesan cheese
- 2 eggs
- 1/8 tsp salt
- 1 pinch pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Directions:
- Preheat oven to 450 degrees. Line 12 cup muffin tin with silicone muffin liners, (or foil muffin liners). Spray muffin liners with non-stick cooking spray.
- De-thaw frozen florets (or lightly steam fresh broccoli), and squeeze excess moisture out using a kitchen towel or paper towel. Chop florets into small pieces (no bigger than the size of a marble). In a large bowl, add the broccoli, cottage cheese, parmesan cheese, egg and spices. Stir until everything is well combined.
- Scoop 1/8th cup broccoli mixture into each cup. Lightly press the broccoli mixture down with fingers in each muffin cup, (this will help everything hold together when it comes out of the oven). Bake for 25-30 minutes (or until lightly golden brown on top). Remove from the oven and enjoy warm!
