2 cups Oat flour (any flour) \t2 tablespoons Baking powder \t1 teaspoon Baking soda \t1 teaspoon Cinnamon \t1/2 teaspoon Salt \t1 (15 oz) can Pumpkin \t2 Eggs \t1 1/4 cup Greek Yogurt Directions: \t Preheat your griddle or skillet. \t In a large bowl, mix together flour, baking powder, salt, and cinnamon, Set aside. \t In another bowl, whisk together the rest of the ingredients until blended. \t Pour into flour mixture and whisk until just mixed; remember that a few lumps are OK. \t Pour 1/4 cup of batter onto the prepared griddle and repeat until you have no more room (about 8 pancakes on a large griddle). Cook until edges start to dry and bubbles are forming on the top, about 3-4 minutes, then flip and cook the other side until brown. Repeat until all batter is used. \tTop with your favorite pancake topping.
