Bacon Cheeseburger Casserole

Toppings

Directions:

  1. Preheat oven to 425 degrees. Spray a 9×13 inch baking pan with cooking spray.
  2. Heat a large skillet sprayed with cooking spray over medium-high heat. Add bacon and cook until crispy. Remove bacon from the skillet and add meat, onion, and seasonings. Cook meat until browned (about 5-7 minutes), breaking it up into crumbles. Add the cauliflower rice. Cook until the cauliflower rice is thawed if using frozen, or just tender if using fresh.
  3. Remove skillet from heat. Transfer the meat mixture to a baking pan and spreading it out evenly. Add Greek yogurt, eggs, ketchup (or tomato paste), mustard, and parmesan cheese and toss everything together until combined. Top with bacon and shredded cheese. Cover with foil and bake for 25 minutes, or until cooked through.
  4. Remove from oven and discard the foil covering. Return to the oven and broil additional 2-3 minutes, or until cheese is just beginning to brown. Remove from the oven and garnish tomatoes and pickles, if desired. Enjoy!
