Freezer Breakfast Burritos

Ingredients

  • 1 – 12 oz pkg turkey sausage or ground turkey
  • 3 eggs
  • 6 egg white
  • 1/3 cup cottage cheese
  • 3/4 cup shredded cheddar cheese
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 red bell pepper
  • 6 tortillas – medium size. (100 calorie approximate)

Directions:

  • Spray a large nonstick pan with cooking spray. Heat over medium high heat. Add sausage or turkey to pan, breaking it up with a spatula while it browns. If you are adding bell pepper (or vegetables), add them after the meat is browned, cooking them through until just tender.

  • Scoop the meat and veggies (if using) onto a plate, and add eggs to the pan, followed by cottage cheese and salt and pepper. Cook eggs about 1-2 minutes, scrambling them as they cook. Once they are cooked to your liking, turn off heat and add the cooked meat, ,veggies, and shredded cheese to the pan stirring them in with the eggs.

  • Divide egg mixture evenly between 6 tortillas, and wrap them up around the eggs. (I like to tuck the sides in while rolling so the filling doesn’t spill out.)

  • Let burritos cool at room temperature completely before freezing. Wrap each burrito individually in plastic wrap, or whatever you prefer. Place burritos in a freezer ziplock bag, and place in freezer. (Note, if you are going to eat them within one week, you can put them in the fridge, individually wrapped.)

  • When you are ready to serve, unwrap the burrito, place in a paper towel and warm the burrito (one at a time if warming multiple) for 45 seconds. Then flip it over, and microwave for another 30 seconds, or until warmed through. This method will ensure they are evenly warmed through! (If they are in the fridge rather than the freezer, warm for about 20 seconds on each side.)

  • Serve with a side of salsa, or whatever you like to dip your eggs in if desired!

VEGETARIAN OPTION: OMIT TURKEY /TURKEY SAUSAGE
