- 1 cup oat flour
- 3/4 cup protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- 1/3 cup low sugar applesauce
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup almond milk
- 1/3 cup chocolate chips
Directions:

Preheat oven to 350 degrees and spray a muffin tin with nonstick spray.

In a small bowl, stir together oat flour, baking powder, baking soda, protein powder, and salt.

Whisk in the eggs, apple sauce, vanilla, lemon juice, and milk. Whisk until well combined. Stir in chocolate chips.

Using a cookie scoop, divide evenly into 12 muffin tins. Bake for 20-25 minutes, or until toothpick inserted comes out clean. Once fully cooled, remove pancakes bites with a knife. Enjoy warm or room temperature.
