Zuppa Toscana Soup

Ingredients

 

  •  1 1/2 ground turkey or lean beef
  • 4 med potatoes diced quarter-sized
  • 1⁄4 teaspoon crushed dried red pepper flakes
  • 1⁄4 cup diced onion
  • 1 1⁄2 cloves garlic minced
  • 1- (14 1/2 ounce) can Italian plum tomatoes, drained, coarsely chopped
  • 6 cups water
  • 1⁄4 teaspoon salt
  • 1 1⁄2tablespoons minced parsley
  • 4 cups diced kale
  • grated parmesan cheese

Directions:

  1. In the Insta pot, simmer the diced onions and turkey until the turkey is brown. Add to red pepper flakes and garlic.

  2. Turn the simmer function off and add the rest of the ingredients except for the Parmesan cheese. Cook for 10 minutes and release Steam

Serve with Parmesan cheese.

Crockpot:

  1. Sauce onions and turkey on the stovetop and add ingredients to crockpot.
  2. Cook on high for 4 hours or low for 6.
  3. Top with Parmesan when finished.
