Alfredo Sauce

Directions:
For the Chicken:
- Preheat oven to 425 degrees.
- Line a baking sheet pan with parchment paper.
- Toss chicken in oil and spices.
- Place chicken on baking sheet pan and roast chicken for 15 minutes, or until chicken is cooked through.
For the Fettuccini Alfredo:
- While the chicken is cooking, add water to a pot and bring to a boil.
- Add salt to taste. Once at a rolling boil, add fettuccine.
- Stir occasionally so the noodles don’t stick to each other.
- Cook for about 10-13 minutes, or until the noodles are al dente (they are best when not overcooked).
- Drain and set aside.

- Spray the same pot used for your noodles with cooking spray and set over medium heat.
- Spray with cooking spray.
- Add the garlic and sauté for about one minute.
- Add the chicken broth and milk. Let simmer for a minute.
- Add oat flour and quickly whisk.
- Let simmer for about 5-7 minutes, or until sauce starts to thicken. Reduce heat to low and add the parmesan cheese and pepper.
- Stir until the cheese is melted, then remove from heat and toss with the noodles.
