Ingredients: \t 1 Pound ground turkey or 93/7 lean ground beef \t 1 Tablespoon coconut aminos \t 1 Tablespoon of unsweetened almond or coconut milk \t 1 Egg beaten \t 1 1/2 Tablespoon flour or coconut flour \t 1/2 Teaspoon onion powder \t 1/2 Teaspoon garlic powder \t 3/4 Teaspoon sea salt \t 1/4 Teaspoon ground black pepper SWEET AND SOUR SAUCE: \t 3/4 Cup Monk Fruit or Splenda brown sugar \t 1/2 Cup Distilled white or apple cider vinegar \t 1/4 Cup ketchup \t 1 Teaspoon garlic salt \t 1 Tablespoon coconut aminos THICKENER: \t 1 Tablespoon Tapioca flour \t 1 1/2 Tablespoon water Directions: MEATBALLS: \t Preheat oven to 400° F. Grease a baking sheet and set aside \t In a small bowl, mix together the dry ingredients and set aside \t In a large bowl, mix together the meat, coconut aminos, milk and egg until well combined. \t Add the dry ingredients to meat mixture and stir until well blended. \t Roll the mixture into 1-2” balls and place on prepared sheet. \t Bake into the oven for 10-15 minutes until tops are browned. SAUCE AND PUTTING TOGETHER: \t In a small bowl, whisk together the sauce ingredients and transfer the baked meatballs into a pot and pour sauce over them. Cook on medium heat until sauce begins to bubble, stirring every 3 minutes. \t Mix 1 tablespoon tapioca flour into 1½ tablespoons cold water and add to sauce. Add to pot and mix until smooth. Serve with a carb and a veggie. Serves 6.
