Skinny Chicken Alfredo Bake

Ingredients

  • 1 (16 oz) box penne pasta – preferably Bonza or chickpea pasta
  • 1 cup hummus
  • 1 tablespoon fresh minced garlic
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon Italian seasoning
  • 1/2 teaspoon pepper
  • 3 cups oat milk
  • 1 tablespoon fresh minced parsley
  • 1 cup Parmesan cheese
  • 1/2 cups mozzarella cheese
  • 16 oz cooked chicken

Directions:

  1. Preheat oven to 425 degrees. Spray a 9 x13 inch baking dish with cooking spray.
  2. Prepare pasta to al dente in a large pot or Dutch oven. Drain and set aside.
  3. In the same pot, add the hummus. Use a whisk to stir. Add minced garlic, garlic powder, onion powder, black pepper, and Italian seasoning. Whisk until mixed.
  4. Add milk one cup at a time and continue to stir. Add one cup of parmesan cheese and stir to mix and melt. Once all the sauce is melted, stir in chicken and pasta.
  5. Optional Step: Pour pasta into the baking pan. Top with remaining 1/2 cup of mozzarella cheese and parsley. Bake for 5-10 minutes to melt the cheese. Turn on the broiler for a couple of minutes to brown if desired.
