Overnight Pumpkin Pie Oats

Ingredients

  • 2 cups almond milk
  • 1 cup water
  • 2 1/2 cups  uncooked quick oats
  • 1/4 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons pumpkin pie spice or cinnamon
  • 1/2 cup  chopped pecans or walnuts
  • 1 cup Greek Yogurt
  • 1 /2 cup vanilla protein powder

Directions

  1. In a mixing bowl combine milk and protein powder. Set aside
  2. In a separate bowl mix the water,  oats, pumpkin puree, vanilla extract, salt and pumpkin pie spice and agave to the bowl.
  3. Then stir until well combined. Allow the oatmeal to sit overnight in the refrigerator covered.
  4. If the oatmeal is too thick, stir in a tablespoon of water at a time until it reaches the desired consistency.
  5. *This can be also prepared in the microwave or stovetop by simmering for 2-3 minutes.
  6. Add honey, and stir. Enjoy!

Serves: 4 | Serving Size: 1 cup oatmeal
