- 2 cups almond milk
- 1 cup water
- 2 1/2 cups uncooked quick oats
- 1/4 cup canned pumpkin puree
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 teaspoons pumpkin pie spice or cinnamon
- 1/2 cup chopped pecans or walnuts
- 1 cup Greek Yogurt
- 1 /2 cup vanilla protein powder
Directions
- In a mixing bowl combine milk and protein powder. Set aside
- In a separate bowl mix the water, oats, pumpkin puree, vanilla extract, salt and pumpkin pie spice and agave to the bowl.
- Then stir until well combined. Allow the oatmeal to sit overnight in the refrigerator covered.
- If the oatmeal is too thick, stir in a tablespoon of water at a time until it reaches the desired consistency.
- *This can be also prepared in the microwave or stovetop by simmering for 2-3 minutes.
- Add honey, and stir. Enjoy!
