Mexican Street Corn White Chicken Chili


  • Chicken breast
  • Chicken broth
  • Taco seasoning
  • Diced tomatoes and green chiles
  • White bean
  • Corn
  • Lime juice
  • Greek yogurt
  • Shredded cheese

Toppings: 2 avocado cubed


  1. Add everything except for the lime juice, Greek yogurt, avocados, and shredded cheese to your crockpot.
  2. Cook on high 4 hours, or low 8 hours. After cooking, remove chicken from the crockpot and shred. Return chicken to crockpot.
  3. Add lime juice, Greek yogurt, and shredded cheese. Stir until combined. Let sit for about 10 minutes, then stir again and enjoy with toppings of choice!
  4. Top with avocado for healthy fat!
