Mediterranean Chicken Skewers with Tzatziki Sauce

Ingredients

  • 6 boneless, skinless chicken breasts, cut into chunks (1.5lb)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine olive oil, lemon juice, garlic, oregano, basil, salt, and pepper.
  2. Add chicken chunks to the marinade, toss to coat, and marinate for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Thread chicken chunks onto skewers and grill for 5-7 minutes per side, or until fully cooked.
  5. In a medium bowl, combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper to make tzatziki sauce.
  6. Serve grilled chicken skewers with a generous dollop of tzatziki sauce.
