- 6 boneless, skinless chicken breasts, cut into chunks (1.5lb)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup Greek yogurt
- 1 cucumber, grated
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
Instructions:
- In a large bowl, combine olive oil, lemon juice, garlic, oregano, basil, salt, and pepper.
- Add chicken chunks to the marinade, toss to coat, and marinate for at least 30 minutes.
- Preheat grill to medium-high heat.
- Thread chicken chunks onto skewers and grill for 5-7 minutes per side, or until fully cooked.
- In a medium bowl, combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper to make tzatziki sauce.
- Serve grilled chicken skewers with a generous dollop of tzatziki sauce.
