Greek Yogurt Marinated Chicken with Summer Veggies

Ingredients

 

  • 6 boneless, skinless chicken breasts (1.5 lb)
  • 1 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • 2 zucchinis, sliced
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil

Instructions:

  1. In a large bowl, mix Greek yogurt, lemon juice, garlic, oregano, dill, salt, and pepper.
  2. Add chicken breasts to the marinade, ensuring they are well-coated. Marinate for at least 1 hour.
  3. Preheat grill to medium-high heat.
  4. Toss sliced zucchinis, bell peppers, and red onion with olive oil, dried basil, salt, and pepper.
  5. Grill chicken breasts for 6-7 minutes on each side, or until fully cooked.
  6. Grill vegetables for 4-5 minutes, turning occasionally, until tender.
  7. Serve grilled chicken with a side of grilled summer veggies.
