Directions:
- Add all ingredients except the blueberries to your blender and blend until smooth.
- Heat your pan or griddle over medium heat and spray with cooking spray. Pour the batter in 1/4 cup amounts onto the hot griddle, then top with about a tbs of blueberries.
- When pancakes bubble, flip and cook the other side until golden brown (about 2 minutes on each side). Continue to cook until the batter is gone (you should get 12 total when using 1/4 cup batter per pancake), spraying pan with cooking spray between batches. Enjoy with your favorite pancake toppings.
Makes 12 pancakes- 4 pancakes per serving
